Spice up your RICE!!!

Ingredients:

2 cups of extra long grain rice (I personally prefer Riceland or Mahatma)
1/4 cup of vegetable oil (that dont matter they are all FAT lol )
1 tablespoon of salt
a piece of onion
a piece of green pepper
small ripe tomato
2 1/2 cups of water

**This will feed a family of 4, double the portions for a bigger family :)

Fry the onion and pepper in a 1/4 cup of vegetable oil on medium heat. Let it fry of about 5 minutes before  you add the rice. Wash the rice while the onion and pepper are frying.

Add the 2 cups of rice. Fry the rice with the onion and pepper for a few minutes.

Add 1 table spoon of salt.

Cut up a ripe tomato. We are going to use the tomato to give the rice color.

Once the tomato has cooked and the rice has a nice reddish tint add the water and increse the heat to high ( as high as your stove allows)

When the water boils cover the pot and let it cook in low heat. ( the lowest your stove allows)
I tried to get a pic and this is the best i could do lol )
*don't let it boil too long as soon as most pot is boiling  your are ready to go

Cover the rice and do not uncover for 20 minutes.

After 20 minutes uncover and move the rice around, if you feel it is too tender use the lid pour a little bit of water and cover again for a few minutes. The reason I say to use the lid is because its hot and it will warm the water a  bit.

And VOILA you have some yummy rice for your family!!!

Let me know if you will try it and how it turns out!! Enjoy!!
